Christmas Menu For A King

I ordered a crown pork roast today from Gary, the butcher at Sam’s Club.  A stuffed crown roast will serve as the foundation for our Christmas meal with family.  It seems to me a fitting dish with which to honor the birth of a King.

I can almost taste it already with the apple/herb bread stuffing.

Complemented with the following delectable dishes:

Spinach/red onion pecan salad 

Honey Glazed Ginger Carrots

Cashew-Peach Sweet Potatoes

Lemon Brussel Sprouts (maybe)

Cheddar Crescent Rolls

And all topped off with a Chocolate Orange Buche Cake

We’ve never done a crown roast before … it seems fairly straightforward … anyone have any pointers?

Looking forward to special dinner and Christmas traditions with the family … both new and old.

We have lots of baking to do this week as well since we are going to make cookie plates for each of our nine neighbors on the street and include personal card with a Christmas gospel enclosed.

I’m glad we celebrate the birth of the Savior.  I’m even more glad that I know WHY we celebrate it.  How about you?
